
Summer Salad

I whipped this Summer salad together all from ingredients gathered at my local market the Ferguson Farmers' Market. It is a really easy prepare in hot weather.
1) Start 3-4 beets boiling --- you will know that they are ready when you can insert a fork easily.
2) Rinse beets in cold water, skin, and dice.
3) Rinse and break up baby lettuce
4) Rinse and cut the stems off the broccoli
5) Sprinkle lightly with Mendora Bleu Cheese or another milder variety so as to not over-power your palate.
6) Add 3-5 roasted pecans as a garnish
7) Top with a red wine basalmic vinagrette
8) Lightly salt and pepper to taste
